

Miyabi is committed to achieving perfection with the launch of Miyabi Kaizen, which means improvement or change for the better in Japanese. This new generation of Miyabi knives combines advanced hardening technology with traditional Japanese craftsmanship. The core of these knives is made from VG10 super steel and is encased in a beautiful 64-layer Damascus pattern. The CRYODUR blades offer exceptional sharpness and durability due to a unique ice-hardening treatment. Skilled artisans then hand hone the blades using the traditional Honbazuke method, resulting in precise cutting for users. The blades are complemented by a D-shaped handle made of black linen Micarta, which has a wood-like texture, providing a comfortable grip that resists slipping and moisture. These knives are handcrafted in Seki, Japan.
